Christmas wedge salad wreath

Ingredients (7)

  • 2 tbsp extra virgin olive oil
  • 8 shortcut bacon rashers, coarsely chopped
  • 30g (1/2 cup) panko breadcrumbs
  • 4 baby cos lettuce, halved
  • 125g cherry tomatoes
  • Caesar salad dressing, to drizzle
  • Shaved parmesan, to serve

  • Step 1 Heat the oil2 tbsp extra virgin olive oil in a non-stick frying pan over medium-high heat. Add the bacon8 shortcut bacon rashers, coarsely chopped and cook, stirring, for 3 minutes or until golden brown. Transfer to a plate lined with paper towel. Add the garlic butter and breadcrumbs30g (1/2 cup) panko breadcrumbs to the pan and cook, stirring, for 1-2 minutes or until golden. Transfer to a bowl.
  • Step 2 Arrange the lettuce4 baby cos lettuce, halved on a serving platter in a wreath shape (use the picture as a guide). Cut half the tomatoes125g cherry tomatoes in half and the remaining into quarters and arrange on top of the lettuce. Drizzle over the dressingCaesar salad dressing, to drizzle and sprinkle with the bacon, breadcrumb mixture and parmesanShaved parmesan, to serve to serve.
