Ingredients (8)
- 265g jar Castello marinated fetta cubes in oil with garlic and herbs
- 2 tbsp cornflour
- 3 tsp cajun seasoning
- 1 egg
- 2/3 cup panko breadcrumbs
- 1 tbsp chopped fresh coriander, plus extra leaves to serve
Maple Hot Sauce
- 2 tbsp maple syrup
- 1 tbsp sriracha
Method
- Step 1 Drain fetta, reserving 1 tablespoon oil for sauce.
- Step 2 Combine cornflour and cajun seasoning in a bowl. Whisk egg in a separate bowl. Combine breadcrumbs and coriander in a bowl. Season with salt and pepper. Working in batches, coat fetta in cornflour mixture. Dip in egg, then toss in breadcrumb mixture to coat. Place on a plate. Freeze for 1 hour.
- Step 3 To make maple hot sauce, place maple syrup, sriracha and reserved oil in a small saucepan over medium-low heat. Whisk constantly for 3 to 4 minutes until sauce just starts to simmer and thicken. Remove from heat. Keep warm.
- Step 4 Preheat air fryer to 180C. Place fetta cubes, in a single layer, in air fryer basket. Cook for 3 to 4 minutes or until golden and fetta just starts to soften. Serve fetta with maple hot sauce, sprinkled with extra coriander leaves.
