Ingredients (6)

  • 2 cups water
  • 1 1/3 cups caster sugar
  • 5 thick strips lemon rind
  • 1/2 cup lemon juice
  • 1/2 cup limoncello
  • 4 lemon halves, hollowed out, frozen, to serve (optional)

Method

  • Step 1 Stir water, sugar and rind in a saucepan over medium-high heat. Stir for 2 minutes or until sugar dissolves. Simmer for 3 minutes. Cool.
  • Step 2 Stir in lemon juice and limoncello. Transfer to a jug. Cover. Place in fridge for 4 hours. Discard rind.
  • Step 3 Churn in an ice-cream maker for 25 minutes or until a sorbet forms. Serve in frozen hollowed out lemon halves, if desired.
