  • 1 green shallot, cut into matchsticks
  • Iced water, to soak
  • 2 x 190g pkt spring onion and chive cream cheese, at room temperature
  • 200g tub Yumi’s Avocado & Sea Salt dip
  • 250g cream cheese, chopped
  • 2 qukes (baby cucumbers)
  • 65g mini tomatoes
  • 1 small salami stick, cut into rounds
  • Fresh dill, to decorate
  • Fresh curly parsley leaves, to decorate
  • Pea shoots, to decorate
  • Pretzel sticks, to decorate
  • Pretzel star (or use a star Christmas decoration), to decorate
  • Assorted crackers & pretzels, to serve

  • Step 1 Draw a triangle on a sheet of baking paper, 26cm at the base and 35cm in height. Cut out and place the triangle, ink-side down, on a large serving board.
  • Step 2 Place the shallot1 green shallot, cut into matchsticks in a small bowl and cover with iced waterIced water, to soak. Set aside for 10 minutes to curl. Drain.
  • Step 3 Meanwhile, use electric beaters to beat the spring onion and chive cream cheese2 x 190g pkt spring onion and chive cream cheese, at room temperature in a bowl until smooth then spoon half into a piping bag fitted with an open star piping nozzle. Spoon the remaining mixture into a piping bag fitted with a star piping nozzle. Spoon 1 tablespoon of the avocado200g tub Yumi’s Avocado & Sea Salt dip and sea salt dip into a piping bag fitted with a small plain piping nozzle. Beat the cream cheese250g cream cheese, chopped in a clean bowl until smooth then add the remaining avocado and sea salt dip. Beat until well combined. Spoon half of the avocado dip mixture into a piping bag fitted with a closed star piping nozzle. Spoon the remaining avocado dip mixture into a piping bag fitted with a petal piping nozzle.
  • Step 4 Pipe the cream cheese mixtures inside the outline on the paper (use the picture as a guide). Thinly sliced 1 quke and peel the remaining quke into ribbons.
