Ingredients (5)

  • 2 cups white sugar
  • 7 cups water
  • 300g fresh raspberries or frozen raspberries, pureed
  • 8 large oranges, juiced
  • chilled mineral water

Method

  • Step 1 Combine sugar and water in a large saucepan over medium heat. Cook, stirring occasionally, for 10 minutes or until water comes to the boil and sugar has dissolved. Remove from heat.
  • Step 2 Stir raspberries into warm sugar syrup. Cool to room temperature. Strain through a sieve. Discard pulp. Stir in 2 cups of juice.
  • Step 3 Place mixture into an airtight container. Freeze overnight. Use a fork to break up mixture. Place back into freezer for 1 hour.
  • Step 4 Scoop mixture into pre-chilled glasses. Pour over a little mineral water. Serve.
