Ingredients (4)
- 1kg orange sweet potato (kumara), peeled, halved, cut into 3cm chunks
- 1kg butternut pumpkin, deseeded, peeled, cut into 3cm chunks
- Salt & freshly ground black pepper
- 2 tbsp fresh thyme leaves
Method
- Step 1 Place sweet potato in a 28cm steamer over a saucepan of boiling water over medium-high heat. Cover and steam for 10-15 minutes or until tender. Transfer to a large heatproof bowl and cover with foil to keep warm.
- Step 2 Place pumpkin in the steamer and steam for 10-12 minutes or until tender. Add pumpkin to sweet potato. Use a potato masher or a fork to mash sweet potato and pumpkin until almost smooth. Season with salt and pepper.
- Step 3 Spoon into a large serving bowl and sprinkle with thyme leavesleftover. suggestions: Use thyme in marinades and sauces.
